Hi everyone! This
recipe is super quick, super easy and most importantly, it multiplies.
Seriously, I ran out of tortillas before I ran out of the filling, so go ahead
and make ‘em chubby ;)
Ingredients:
1
package pulled pork (about 350 grams if you cook your own)
1 ½
cups grated cheese (any kind as long as it melts)
½ sliced red onion
1
chopped green chili
1
handful of spinach (chopped)
1
/12 cups sweet corn
1
can of black beans
¾
cup sour cream and a little extra to garnish
Vegetable/olive
oil (not pictured)
20-25
flour tortillas (Also not pictured, sorry!)
Salt
First of all, heat about a teaspoon of oil in frying
pan. Add onion and chopped chili. Cook for a minute and then add the spinach.
Season with salt.
In bowl, mix the rest of the ingredients together,
seasoning with salt to taste. Add the mix from the frying pan. Mix well.
Assemble the burritos. Be generous J
In same pan heat some more oil, just enough to make
the burritos crunchy. Place burritos on pan and cook for about 2 minutes on
each side on medium heat.
Serve with sour cream and salsa and enjoy!
