Hi everyone! Recipe Day is here and in honor of a
friend who recommended our Blog for Mexican recipes I decided to do something
typically Mexican today. Of course it’s simple and delicious as well. Hope you like it!
INGREDIENTS:
6 poblano chiles
½ sliced onion (I love purple onion
but you can use any kind)
1 ½ cups grated or shredded cheese (I
used string cheese)
1 large potato
1 cup sour cream
Salt & pepper
1 tsp vegetable/olive oil
INSTRUCTIONS:
Like our chile relleno recipe, roast
the chiles on the stovetop, peel and devein.
Cut chiles in thin, medium-sized
slices (rajas).
Heat the oil in pan, dice the potato
and fry for a few minutes, add salt and pepper.
Add
onions and cook until tender
Add the rajas to the mix.
Add
the sour cream and mix everything together; add some salt & pepper in there
too
Add a top layer of cheese, cover pan,
and allow mix to boil and cheese to melt.
Et voilá! Serve with rice and/or
tortillas to eat in tacos J
